Linzer biscuits are an annual festive classic. This year I made them in a slightly healthier way – gluten-free and with healthier forms of sugar. They are made from nut flour, agave syrup and coconut sugar. You can choose the flour to your taste – almond, walnut, hazelnut – in short, your favourite. These Linzer stars are crumbly and just sweet enough, with a hint of caramel. They are the kind of biscuits that disappear from the platter the fastest.
