This recipe came about completely spontaneously: I had a tin of lychees in the pantry and a craving for something refreshing. The idea of a lychee drink popped into my head, and after the first sip I knew I had to share this recipe with you.

Why lychee?
Besides its fresh taste, lychee is a real treasure trove of nutrients. It is rich in vitamin C, which strengthens the immune system and helps with iron absorption. It also contains antioxidants, which protect cells from oxidative stress, and fibre, which supports healthy digestion.
There are only about 66 calories in 100 g of lychee, so it makes a light and refreshing snack. Especially combined with homemade iced tea, which is practically a calorie-free drink. If you are looking for a healthier alternative to sugary juices, this drink is the perfect choice.
Tips for the best result
Choose the tea to your own taste. Jasmine or green tea complement the sweetness of the lychee wonderfully, while fruit tea or hibiscus will add a lovely colour too. You can also use white tea for a more delicate aroma. The key is to cool the tea well before using it, so the drink is truly refreshing.
Don't throw away the liquid from the can, use it as a sweetener instead. And the frozen raspberries at the end are not just for looks: they melt slowly and add a touch of tartness that takes the whole drink to a new level.
