These healthy gluten-free and oil-free muffins contain a secret ingredient. Can you guess which one? “Red velvet” is a type of bake with a characteristic red colour, which is usually achieved by adding food colouring. But in this recipe we won't be adding artificial colourings or flavourings, because a gentle reddish colour can also be achieved with natural ingredients – such as beetroot! In this recipe I used cooked beetroot, which you can buy vacuum-packed in supermarkets (in the fruit and vegetable section). On top of that, there is no regular flour or gluten in any form in this recipe. It's a healthy snack that absolutely everyone can enjoy.
