The perfect autumn snack

When autumn paints nature in shades of red and yellow and a nostalgic scent fills the air, nothing hits the spot like cookies that smell of pumpkin spice. These crunchy pumpkin cookies are my favourite pick for autumn, when I want to enjoy a warm cup of tea or coffee with something delicious.

The recipe for these cookies is simple. The base is spelt flour, mixed with pumpkin spices for flavour and coconut oil for crunch, and sweetened with maple syrup or agave nectar. Maple syrup is a slightly healthier choice with a lower glycaemic index, while agave nectar adds a somewhat richer sweetness. But you can also use another liquid sweetener, such as stevia syrup, date syrup, vegan honey or molasses.

These cookies are made for autumn, when you crave something crunchy and crumbly to nibble on with your favourite cup of a warm drink. With their aroma of cinnamon, ginger, nutmeg and allspice, they will take you straight into a cosy autumn mood.
