About this recipe
Incredibly soft and fluffy blueberry cookies that need just a few basic ingredients. The blueberry flavour is lifted even further by the combination of lemon juice and zest.
These cookies will delight children as well as more discerning gourmets. Instead of sugar, the recipe uses coconut sugar, and the blueberries contribute some natural sweetness too. You can use fresh or frozen ones – and if you don't have blueberries, you can use other berries as well.
For the topping, you can simply use melted white chocolate, or make a sweet glaze from lemon juice and icing sugar. This recipe makes approx. 15-20 cookies (depending on size).
